Even with extra sharp cheddar, there wasn't enough flavor. I amped it up with caramelized onions and garlic, and it didn't quite do it for me.

It's way too rich and gooey, and I love gooey mac n cheese. My guests gave this four stars, but I'm only giving it two. This has been a staple at our summer bbqs for two years now and there are never any leftovers. I upped the amount of chipotle peppers and used them for the whole batch. Really tasty recipe, the breadcrumbs take it to the next level.

I will be sure to cut back on noodles again next time. Mixed half cheese into white sauce by accident but still turned out great. So I did use 1/2 &1/2 instead of cream and used slightly less mac. Completely recommend and will make again! Would be perfect to reheat or for large gatherings. This mac and cheese is NOT dry or to had the perfect consistency and taste. I used 1 cup of cheddar cheese and 1 cup of mozzarella cheese- worked GREAT. My family prefers super simple dishes, so I nixed the chipotle sauce and used Panko Itailian-style breadcrumbs instead. Lots of requests for the recipe - this was the talk of an office potluck recently! For the cheese, I use 12 oz of sharp cheddar, 12 oz of a jack mix, and the rest parmesan. Cavatappi works well for the noodles (they are ridged, spiral-shaped tubes) - grabs the sauce really well. I also use panko in place of the breadcrumbs - perfect crunch, and they brown really well. It was too rich as written - could not handle more than a few bites - but I now use half and half in place of the cream, and 1% milk instead of whole, and it's perfect - still decadent and gooey. Have made this many times now, and it's always a hit. My go to Mac and cheese recipes for years now!!īest mac and cheese out there!!!!! SO FREAKING AMZING!!!!
